Ingredients
  1. 2 c mahatma rice or 1 boil-in-bag rice
  2. 2 c 8 oz monterey jack cheese, shredded
  3. 1 1⁄2 c chicken breast, cooked and chopped
  4. 1 cn evaporated milk
  5. 1⁄2 c red onion, chopped
  6. 2 lg eggs, lightly beaten
  7. 1⁄4 c fresh cilantro, finely chopped
  8. 2 T butter or margin, melted
  9. 1 t jalapenos, diced (optional)
Instructions
  1. Preheat oven to 350 degrees.
  2. Coat a 2-quart oven-proof casserole dish with nonstick cooking spray.
  3. In a large bowl, stir to combine all ingredients well.
  4. Pour into prepared dish and bake 30 minutes.
